Spicy Vegetable Soup
2 small potatoes, grated
4 tomatos, chopped
1 cup broccoli, chopped
1 cup cauliflower, chopped
1 carrot, grated
3 blocks frozen spinach
0.5 cups frozen corn
2 teaspoons crushed garlic
2 tablespoons oil
1 teaspoons curry paste
2 teaspoons fresh chives, chopped
1 teaspoon mixed herbs
0.5 teaspoons paprika
0.75 cups brown rice, cooked
4 cups hot chicken stock
Saute onion and garlic with oil in a large pot until onion is soft. Add stock, potato, curry paste, chives, herbs and paprika and boil for five minutes. Add tomatoes and boil for another five minutes. Add broccoli, cauliflower, carrot, spinach and corn and boil for twenty minutes. Serve.
Ice Block Recipes
Fruit - Blend passionfruit pulp, pineapple, apple, strawberries, raspberries and lemonade. Freeze in ice pop container.
Choc-Banana - Blend 2 bananas, unsweetened cocoa powder, honey and milk. Freeze in ice pop containers.
Pumpkin and Spinach Rice
Cook 1/4 cup grated pumpkin and 1/4 cup chopped spinach in microwave. Lightly fry (without oil) 2 slices of finely chopped short cut bacon. Mix into 1/2 cup brown rice, along with the vegetables. Add a teaspoon organic peanut butter and put in microwave until melted. Mix well. Add a few drops of soy sauce to taste.
Salmon Patties
Blend chopped spring onions, breadcrumbs from 2 slices toaster multigrain bread, I large can salmon, 2 eggs, 1 teaspoon honey mustard and 2 teaspoons curry paste. Separate into patties and fry (no oil) for two minutes each side. Place in 200'C oven for 5 minutes or until brown.
